    This review is for the 14\’ knife. I have a back yard smoker and cook briskets once or twice a month. This is the knife you need to get consistent, perfect slices.

    It\’s very light and easy to hold with a good grip. It was going good for about 2 weeks. Very sharp but after that dont know what happened. now it does not cut that good. Had tried sharpening it few times but no difference.

    Well made knife, very sharp – managed to cut my finger within 13 seconds of opening the package which was entirely my fault – blade is a little on the thick side compared to my Sabatier chefs knife but that cost many times more than this. I would buy it again.

    This is my first (and last) Mercer knife. I needed a new paring knife and this one had a lot a positive reviews so I took a chance. Big mistake. I do not understand all the positive reviews, unless they are only reviewing the blade and not the handle.

    Mercer knives come ridiculously sharp from the factory. This one is no different, and I have maintained it well. It sharpens easily, holds a great edge, and has not rusted yet. Blade is thin and flexible keeping the overall knife light and agile to make quick work of any cutting task. With a sharp blade, you want good purchase on the handle even when cutting up food gets slippery. The handle on this knife is ergonomic with a rubberized texture as well as a small bumpy area close to the blade that makes it very easy and safe to use. I thoroughly enjoy the speed at which I can break down food purely because the handle is so well made. It\’s also NSF certified and can be used in professional kitchens. In the event that it ever breaks or is stolen, I can easily replace it.

    I ordered this knife for my husband for Christmas because he loves to cook brisket. I was super excited for him to open the knife and use it as we were having brisket for Christmas dinner. He opened the knife and was so excited to put it to use.
